At a Glance… One Week of Meals
Monday: We try to go meat-less
- Oatmeal with grated apple, cinnamon, and brown sugar.
- Veggie salad with beans, feta and red wine vinaigrette
- Kale and Potato Soup, Tomato Salad, Whole Wheat Breadsticks, Chocolate Cake
Tuesday: Always have soup in the freezer in smaller containers to pull and heat up.
- Pumpernickel bread, slice & toasted, cream cheese, cucumber sliced, purple onion slice.
- Ham, lettuce and tomato sandwich on whole wheat, cup of soup.
- Roasted chicken with lemon & thyme, mashed potatoes, fresh steamed green beans, sugar cookies.
Wednesday: Leftover roasted chicken is used to make tacos for tonight and also use the carcass to make stock that will be placed in the freezer.
- Waffle with berries & syrup
- Green bean salad topped with tuna salad.
- Chicken Taco with poblano peppers & onions, thinly sliced cabbage, guacamole, cilantro. Ice cream.
Thursday: Leftover mashed potatoes from Tuesday are used to make a little cheesy potato meatball. Having people over for dinner. Pork shoulder feeds a crowd for a great price.

- Cheesy potato meatball, apple & cabbage salad.
- Roasted pork shoulder with mustard ginger sauce, kim chi, rice, bib lettuce, pickled beets.
Friday: Having some ladies over for lunch. Using the leftover rice for stir fry with the salmon for lunch. Pull chicken stock from freezer; add veggies, herbs, noodles, and leftover pork for a fabulous dinner. I definitely use sriracha sauce in this soup.
- Waffle with almond butter & berries.
- Pan seared salmon with asparagus rice stir-fry.
- Ramen noodle soup with pork, veggies and herbs.
Saturday: Most casual day of the week for us. We hit the markets early. We shop and eat our breakfast there. Then we start running for the rest of the day. We end the day by going out for dinner. I love going out to experience new foods and ways of preparing them. I am always looking for inspiration.
- Farmers Market trip: Fruit, cheese, and baguette.
- Leftovers. Usually a sandwich.
- Out to dinner. No cooking.
Sunday: Just two meals today. Leisurely morning breakfast and late afternoon meal is what we usually do.
- Pancakes, omelet, fruit, and bacon. Lots of coffee.
- Grilled flank steak, baked potato, and mixed green salad.
