This salad gets me rave reviews everytime I serve it. It is really refreshing and super healthy for you and it is a perfect compliment to the Spicy Chicken Thighs. It holds up well, so you can make it ahead for a party or just make up a recipe and snack on it all week. Hardly any calories, so I have no guilt making a pig of myself on this salad. I use my V-slicer to slice up everything and it takes me about 5 minutes to make.
Makes 3 cups
1 apple (any variety), finely sliced
2 cups green cabbage, finely sliced
1 T. ginger, grated on microplane
1 small red onion, finely diced
3 T. cilantro, finely chipped
1/4 cup apple cider vinegar
2 T. olive oil
salt and pepper, to taste
1. Slice all the ingredients. Place in a bowl.
2. Add vinegar, oil, and season to taste.
3. Store in refridgerator.
No way to mess this one up. Enjoy the refreshing taste.
